Zucchini Crust Pizza
Crust:
3 cups
shredded zucchini
2 eggs, beaten
1/3 c flour
3 tbsp. Parmesan cheese

Sauce:
2 cups plain
Greek Yogurt
1 package ranch seasoning mix
1/3 cup finely chopped spinach
1 package ranch seasoning mix

Toppings:
Mozzarella
cheese
Cubed cooked Chicken
Tomatoes, chopped
Cubed cooked Chicken
Tomatoes, chopped

Start
by shredding your zucchini. Salt it
slightly and allow it to sit in a strainer and to drain the water out of
it. Press it hard and get rid of as much
moisture as you can.

Combine
zucchini with eggs, flour and Parmesan cheese.
·
Spread
onto pan and bake at 350 degrees for 8-10 minutes.
·
Remove
crust and let cool slightly.
·
Spread
on your sauce.
·
Add
toppings of choosing.
·
Return
to oven and bake for an additional 15-20 minutes.
This recipe
is easily adjustable. You can even use
regular pizza sauce and toppings with your zucchini crust.
