Taste Test - Zucchini Crust Pizza

We launched our taste testing today with a great recipe for Zucchini Crust Pizza!  The Fuel Up to Play 60 Playbook contains a play for a "Grow Your Own Pizza."  We got all the wonderful veggies for our pizza from our school garden.  Hopefully we'll be expanding this garden soon and growing more vegetables for our Fuel Up program.  We also made sure to include dairy by adding some low-fat mozzarella cheese and non-fat Greek Yogurt, and we added protein by adding in our cubed chicken to this delicious dish!


Zucchini Crust Pizza

Crust:
3 cups shredded zucchini
2 eggs, beaten
1/3 c flour
3 tbsp. Parmesan cheese
Sauce:
2 cups plain Greek Yogurt
1 package ranch seasoning mix
1/3 cup finely chopped spinach
Toppings:
Mozzarella cheese
Cubed cooked Chicken
Tomatoes, chopped

·        Start by shredding your zucchini.  Salt it slightly and allow it to sit in a strainer and to drain the water out of it.  Press it hard and get rid of as much moisture as you can. 
·        Combine zucchini with eggs, flour and Parmesan cheese. 
·        Spread onto pan and bake at 350 degrees for 8-10 minutes.
·        Remove crust and let cool slightly. 
·        Spread on your sauce.
·        Add toppings of choosing.
·        Return to oven and bake for an additional 15-20 minutes.

This recipe is easily adjustable.  You can even use regular pizza sauce and toppings with your zucchini crust. 



Note:  Something happened to the pictures I took of our fabulous pizza, so I went searching on the internet.  This one looked very similar so I grabbed it to use.
